My Ultimate Meatball Sandwich

For the longest time I was the absolute biggest fan of Subway’s meatball subs. The chewy bread wrapping so perfectly around meatballs and an almost pizza-like sauce, all warm and melty and good – I mean, y’all? I couldn’t get enough! Not to mention that at the time I worked next door to a Subway restaurant and smelled bread baking all. day. long.

Wanna know a secret? We used to just go get bread with bacon and cheese melted on it. Oh, the days of college-aged metabolism!

But really, meatball subs were my favorite. As my tastes grew and became more adventurous so did my choice in sandwiches, but the other day we were sitting at home for the billionth snowy day in a row and I realized that I could recreate my old stand by with some leftovers in my fridge. Done and done!

This isn’t a recipe post, but rather a suggestion that you do the following:

A) Make these meatballs as soon as possible. So good, so easy, tons of leftovers.

B) Get some good bread from your local bakery, slice it up nice and thick, and toast it lightly on both sides.
